  • 1½ pounds ground beef (I try to use grass fed, organic ground beef when possible)
  • 1 cup coarsely chopped onion (In a hurry? You can substitute ¼ cup dried minced onions. I use Kirkland dried, diced, chopped onions from Costco.)
  • 1 teaspoon finely minced, fresh garlic (You can substitute ¼ teaspoon garlic powder. I use Bolner's Fiesta Brand garlic powder.)
  • 1 medium jalapeno, seeded and chopped (use only if you want heat)
  • 2 cups (1/2 inch) potato cubes (I prefer Yukon Gold or red new potatoes cut into quarters)
  • 1 (10-3/4 ounce) can condensed tomato soup (I use organic when possible), undiluted
  • 1 (14.5 ounce) can Fire-Roasted diced tomatoes, undrained
  • 1 (12 or 15.25 ounce) can whole kernel corn, drained (I use either organic canned or organic frozen corn)
  • 1 (15 ounce) can Ranch-Style beans, undrained
  • 1 (4 ounce) can chopped green chiles (mild or hot, whichever you prefer), undrained
  • 1 cup beef broth (I use organic) or water
  • to taste sea salt (I use Himalayan salt)
  • to taste freshly ground black pepper
  • Finely shredded Cheddar or Mexican cheese
  • Finely chopped Sweet or Purple onions
  • Finely sliced green onions
  • Sliced, canned jalapenos
  • Sliced, fresh jalapenos
  1. In a large Dutch oven or a heavy soup pot over medium-high heat, brown the ground beef, onion and garlic until the beef is no longer pink. (If you want heat, add the fresh, diced jalapeno to the raw meat mixture.)
  2. Drain any grease off of the browned meat mixture.
  3. Add the potatoes, soup, tomatoes, corn, beans and green chiles. Stir until thoroughly combined.
  4. Lower the heat to medium-low, cover and simmer, stirring occasionally, about one-half to one hour. If necessary, add the broth or water to prevent the stew from getting too thick.
  5. Check for seasonings, and add salt and pepper if needed.
  6. Serve with finely shredded Cheddar or Mexican Cheese, finely chopped sweet or Purple onions, thinly sliced green onions, sliced, canned jalapenos or fresh, sliced jalapenos.
